Introduction · CAFÉ BCN SELECT

Barcelona, a European reference for specialty coffee

Specialty coffee is coffee scored 80 points or above on the SCA scale, traceable to its origin, cultivated and processed with intention, roasted in small batches and brewed with precision. It is the antithesis of commercial coffee: not a commodity, but a gourmet agricultural product. Each cup carries the character of its terroir — an Ethiopian Yirgacheffe with floral and citrus notes, a Colombian Huila with caramel sweetness, a Kenyan AA with bright berry acidity. Specialty coffee is, fundamentally, about respecting that character.

Barcelona has become one of Europe's most respected specialty coffee cities. The transformation began in El Born little more than a decade ago, when a handful of pioneers introduced third-wave coffee to a city still deeply rooted in the culture of the cortado in barra. Today, the scene is mature: artisan coffee roasters with their own facilities, baristas trained to international standards, cafés designed as deliberate experiences. The Eixample and El Born remain the epicentres, but Gràcia, Poblenou and Sant Antoni have built scenes with their own personality.

Coffee culture in Barcelona is layered. The traditional café —cortado, terrace, conversation— coexists with the specialty café —V60, single origin, latte art— without contradiction. The city has absorbed the third wave as another expression of its relationship with coffee, not as a replacement. That is precisely what makes Barcelona interesting: you can drink an anonymous cortado at a marble bar at nine in the morning and an Ethiopian pour-over at a specialty roaster at four in the afternoon, and both feel like Barcelona.

Artisan roasting is central to this story. The best coffee roasters in Barcelona work with single-origin beans, design their own roast profiles and treat freshness as a non-negotiable. Roasting is an art: a light roast reveals terroir, a medium roast builds balance, a dark roast hides defects. The roasters we select understand this, and their cafés serve coffee that tastes of where it came from.

Filter methods —V60, Chemex, Aeropress, Kalita— are the clearest expression of specialty coffee. Each method extracts differently: V60 clean and bright, Chemex elegant and tea-like, Aeropress rich and full-bodied. Espresso remains the technical heart of any serious café — eighteen grams of coffee, nine bars of pressure, ninety-three degrees, twenty-five to thirty seconds. And latte art —the rosetta, the tulip— is the visible signature of a barista who has mastered microfoam.

The philosophy of specialty coffee is, in the end, simple: respect the product at every stage. From the farmer to the roaster to the barista to the customer. CAFÉ BCN SELECT exists to find the cafés in Barcelona that embody that philosophy — and to share them with you.

The craft behind a great cup: a guide to specialty coffee

To understand specialty coffee, it helps to understand where it came from. The first wave of coffee was commodity: mass-produced, canned, drunk for caffeine. The second wave, led by brands like Starbucks and Costa, introduced espresso culture, the latte and the café as a destination. The third wave —the wave that concerns us— treats coffee as an artisanal product, on par with wine: terroir-driven, origin-obsessed, prepared with method and served with intent. Barcelona is a leading third-wave city in Europe.

The differences between specialty coffee and commercial coffee are not subtle. Commercial coffee is a blend of anonymous beans, dark-roasted to mask defects and standardise flavour, often stale by the time it is brewed. Specialty coffee is single-origin or intentionally blended, scored above 80 SCA points, light-to-medium roasted to preserve origin character, and brewed within weeks of roasting. Commercial coffee tastes of roast; specialty coffee tastes of fruit, flower, chocolate, caramel — of where it was grown.

Origin is where it begins. Coffee grows in the equatorial belt known as the Bean Belt, between the Tropics of Cancer and Capricorn. Ethiopia is the birthplace of coffee and still produces some of the most distinctive beans in the world — bright, floral, citric. Colombia offers balance and sweetness. Brazil, body and nuttiness. Kenya, vivid berry acidity. The best specialty cafés in Barcelona work with several of these origins and can tell you, cup by cup, where the coffee came from and why it tastes the way it does.

Roasting is the next act. A green coffee bean is, on its own, tasteless. Roasting develops hundreds of aromatic compounds and transforms the bean into something brewable. The roaster's craft is to choose a profile that highlights the origin's character rather than masking it. A light roast preserves acidity and floral notes; a medium roast builds sweetness and body; a dark roast —favoured by commercial brands— burns off origin character and replaces it with the taste of carbon. The best coffee roasters in Barcelona roast light to medium and treat each origin individually.

Then comes brewing. The V60 —a Japanese pour-over cone— produces a clean, bright cup that reveals origin better than any other method. Chemex, with its thick paper filter, delivers an elegant, tea-like brew. The Aeropress, invented by the same mind as the Aerobie frisbee, offers a rich, full-bodied extraction in under a minute. Each method is a different lens on the same coffee. A serious specialty café in Barcelona will offer several of them, and the barista will recommend one based on what you want to taste.

Espresso is the technical heart of any specialty café. It is also one of the most demanding extractions in hospitality: eighteen grams of finely ground coffee, tamped, extracted under nine bars of pressure through water at ninety-three degrees, yielding thirty-six grams of liquid in twenty-five to thirty seconds. A fraction of a degree, a gram of coffee, a second of extraction — each changes the cup. A great espresso has golden crema, syrupy body and a flavour that lingers. A poor one is bitter or sour and forgets itself instantly.

From espresso come the milk drinks. The cappuccino — espresso, steamed milk, foam — is the Italian classic: balanced, structured, traditional. The flat white — espresso doppio, microfoam, served in a smaller cup — is the antipodean favourite: silkier, more integrated, more espresso-forward. The latte is larger, milkier, more forgiving. In each, the quality of the microfoam — glossy, velvety, free of bubbles — is what separates a good café from a great one. And the latte art — rosetta, tulip, heart — is the visible proof that the barista has mastered the milk.

None of this matters, however, without the customer experience. A specialty café is not a laboratory. It is a place where someone walks in, orders, waits, drinks and leaves — and each of those moments is designed. The greeting. The menu — short, deliberate, not encyclopaedic. The barista who asks what you like and recommends accordingly. The cup, the saucer, the spoon. The light through the window. The sound of the grinder. The space that invites you to stay five minutes or fifty. The best specialty cafés in Barcelona understand that coffee is the foundation, but the experience is the building.

This is what we look for at CAFÉ BCN SELECT. Not just good coffee — there is more good coffee in Barcelona than ever. We look for cafés where coffee, craft, space and service cohere into something worth returning to. Cafés where the barista knows the origin, the roaster knows the profile, the room knows the light. Cafés, in short, that earn their place in this guide every time you visit them. That is the standard. That is why this guide is short. And that is why, we hope, you will trust it.
